West Coast IPA - 7% - We had the pleasure of hosting Free Will Brewing Company recently for the first of 2 collabs. We wanted to push the envelope a bit and tweak the classic West Coast IPA. We used Star Party, a newly engineered thiolized Chico strain from Omega yeasts.  This yeast is made to specifically enhance thiol production during fermentation.  To pump those thiols even more, we added Phantasm powder.  Finally, we hopped this bad boy with some fresh simcoe, chinook and NZ cascade. Expect big dank notes of grapefruit, pine and West Coast sunsetS.
